Oatmeal Scotties…aka Breakfast Cookies!

I’ve been so excited for Spring Break. I get a week off, a chance to sleep in, to cook dinner, go out on a weekday, to stay up past 10pm…in short, it’s amazing. And if the weather would just clear up a bit, it would be even more spectacular!

Since April 1st was the last day before Spring Break, I decided to bring some cookies to work. How else were we expected to make it through what was sure to be the longest day of work ever?? The answer: with baked goods, always. :)

I couldn’t wait for after lunch to share my cookies. I wanted one and thought it only right to share with everyone. I put the cookies out just before 9am and declared that they were Breakfast Cookies. They are mostly oatmeal, so they are healthy…right?! Right. Whenever someone new walked in and saw them, I would tell them are Breakfast Cookies and they are healthy, like no fat, no sugar, no calories! They would bite in and realize otherwise…April Fool’s!! Fun was had by all! I played a silly little joke, and they got a delicious cookie. It’s a win-win!

I have this memory of baking these cookies with my sister Lauren and adding chocolate chips…not sure how real it is, but it’s the vision I have. These cookies are just delicious and you could probably put anything you want in them. I went with the traditional butterscotch chips to make Oatmeal Scotties. I added chocolate chips because everything is better with chocolate. So, I say that the chocolate is optional because they are delicious without it, but even more amazing with chocolate. You decide. I ended up making some of each for the sake of variety. Do what you want and have fun with it. :)

Oh, and this is a family recipe. It comes to you straight from the Grady Family Cookbook. The only adjustment I made was the chocolate chips. I didn’t even add additional vanilla (shocking, I know). So, I really hope you enjoy this one because it has a little added sentimental value!

Oatmeal Scotties
2¾ cups flour
1 teaspoon baking soda
2 teaspoons salt
1½ cups butter
2 cups brown sugar
1 cup sugar
2 eggs
2 teaspoons vanilla
½ cup water
6 cups quick cooking rolled oats
1 bag butterscotch chips
up to 1 bag chocolate chips (optional)

Preheat oven to 350°F. Cream together butter, brown sugar, and sugar.
2 cups of brown sugar sounds like a lot, but it's great, I promise.

Add eggs and beat until smooth. Add vanilla.
Confidence and experience allow me to crack an egg directly in the bowl without fear of the shell escaping. :)

Gradually add flour, baking soda, and salt, alternating with water, ending with flour.
Beautiful and creamy. I love it!

Stir in oats and butterscotch chips. Add chocolate chips, if you so desire (and you really should).
No chocolate chips, yet. I added those in a separate bowl of cookie dough.

Drop by tablespoons onto ungreased cookie sheets.

Bake for 10-12 minutes or lightly golden brown. Makes 6-7 dozen cookies.
