Inspiration can come from just about anywhere. In the case of this recipe, it came from my brilliant Uncle Sean. For those of you who have not had the pleasure of having a meal prepared by Sean, let me explain. He is a culinary genius. He opened my eyes, heart, and taste buds to the magic that is arugula, now my favorite green. He paired arugula with portabella mushrooms, onions, and a balsamic reduction to make the best salad I have ever had. His pizza is out of this world. Simply put, the guy knows his way around a kitchen. So on Friday night, while we were texting about dinner at his house for Saturday night, he requested that I make dessert.

Hello hello!! I'm Buttercup is BACK!!! So sorry for the delay, but I haven't been baking much these past few months. Back in July, I joined Weight Watchers. To make a long story short, I was miserable at my job and needed to do something good for myself OTHER than work 40 hours a week. Since then, I have done exceptionally well on the program. The only problem?? I don't bake as much as I used to which is why I have been very quiet in cyberspace these days.

I've seen recipes for Chocolate Chip Cookie Dough dips, spreads, and frostings, but never felt compelled to make them myself. Cookie Dough is so delicious that I did not need to know how to make it solely for eating the dough (without eggs) and never baking cookies. But then my best friend Pam found this recipe and shared it on Facebook with her fiance Chris, joking that they should have this instead of wedding cake.

Snickers Cupcakes

Have I told you about Friday Friends Dinners? I'm not sure that I have. Just in case, let me explain them now. About once a month, a group of us get together for dinner on a Friday night at a different restaurant each time. One person plans the dinner and invites all of us on Facebook. I have yet to plan one, but I look forward to it! Well, for the month of May, Nicky had us all over to her apartment building downtown to watch the Padres game from the 14th floor rooftop. Everyone brought a dish to share and we had a phenomenal potluck. It's awesome having friends who can cook well! :)

I was sort of stressing about what to make because it is rare that I have such a captive audience. I knew it had to be easy to eat, from scratch, and appeal to a wide range of people. I searched high and low for the best dessert I could find when I stumbled upon Homemade by Holman. Within this blog, I discovered the incredibly delicious Snickers Cupcakes.

Cinco de Mayo Pinata Cookies

Back in the beginning of May, my lovely sister Lauren shared a link to a recipe with me. It was for these adorable Cinco de Mayo Pinata Cookies that she discovered on Pinterest. Of course, being the baker that I am, I wanted to make them immediately. Cinco de Mayo was only 3 days away, which felt like plenty of time to put these together for my friends. Boy was I wrong!  Pinterest should come with a warning label:

These were the single most difficult thing I have ever attempted to make. But, I did it and my roommate Margaret loved them. So, I would consider this baking adventure a moderate success. Normally when I share a recipe, I type it out again for my readers to follow step-by-step without leaving my blog. Today I don't think that is necessary. I am going to share with you step-by-step the craziness that went through this blog. I would highly recommend you visit the original site for a more detailed look into exactly how this is supposed to be done. I'm just here to share my hilarious experience. :)

I am a terrible blogger. When I renewed my URL for 2 more years, I had no idea it was going to be this difficult to continue you writing, baking, and sharing pictures of tasty treats with all of you. Why is it so hard? Well, first of all, it is expensive. I need to start generating income from this blog through ads or something to help supplement the cost. Secondly, it's time-consuming. I baked on Saturday and took the pictures, which is all fine and dandy. But then finding the time in the week to sit down and write is hard. I sit at a computer 40 hours a week, and turning on my laptop at home takes more motivation than I have. Please note: it is May 2nd, and I am turning on my laptop for the first time since March 23rd when I had my IT Department clean up my computer for me. Yeah, it's pretty terrible. Anyway, the third and final reason for the long delay: my roommate had to give up sweets for 28 days and it was in the middle of Lent when people at work were staying away from desserts, so I felt like it would just be cruel to bake. Plus, I didn't want all of the leftovers to myself!

So, where does that bring me today? A few recipes behind (I even have a draft of something saved from January) and trying to catch up. I'll get back to those things I've made in the past couple of months eventually, but for now let's focus on the present. I'm back. I'm going to do my best to be here regularly!!! Peanut Brittle

So, once again, it's been far too long since I posted anything. The holidays flew by and somehow it is 2012. I can't believe I have been at CCSD for 3 months now and that I am just days away from my health insurance kicking in! It's a bittersweet time though, as I am happy to be in a stable job, but miss the middle school counseling daily. I'm constantly plotting ways to go back and visit my previous schools. One of these days I'm going to show up at Lewis for supervision at 7am and see what happens. And still try to make it to CCSD by 8am (totally doable). Anyway, I apologize for the lack of posts. I sit at a computer 40 hours a week and I often avoid my laptop like the plague when I get home. But I'm getting back into the blogging starting now!

Over the holidays, I had some really delicious peanut brittle at a friend's house. She had it sitting out with other food and I was drawn to it. I love, love, LOVE the stuff and can't get enough of it, but it's one of those things that I never buy and don't really think of until I have it unexpectedly. Then it's all I want. And I mean it: ALL I WANT.
