Banana Oatmeal Muffins!! |
Back to the baked goods at hand. :) I found these Banana Oatmeal Muffins from a web search which led me to a blog called Keeping Up with the Joneses. Super cute couple and great recipes on the blog. I was really intrigued because she used her blender to whip everything together! Awesome. :) They are a little spongy but I think that is because there is no fat in the them. Next time, I might use low-fat Greek yogurt instead of non-fat. Either way, they are delicious and freeze well! I froze half of them and then could take one out of the freezer in the morning before work. By the time I needed something to eat at work, it would be defrosted! Awesome!
Banana Oatmeal Muffins (
2 bananas
6 ounces non-fat, plain Greek yogurt
2 eggs
½ cup sugar
¼ cup brown sugar
1½ teaspoon baking powder
½ teaspoon baking soda
2½ cups old-fashioned oats
Preheat the oven to 400°F. Spray muffin tin with non-stick cooking spray or line with silicone or foil liner (paper liners stick too much in a base without flour). Place all of the wet ingredients in a blender or food processor and then add the dry ingredients.
First you add the wet ingredients. |
And then you add the dry! |
This is oddly beautiful to me, so I felt compelled to share. :) |
Shout to my sister Erin for my awesome blender! :) It was a 21st birthday present! |
I opted to use cooking spray instead of foil liners. |
Golden brown and puffy! So cute!! |
Ready for breakfast! Or a snack... :) |
Thanks for coming back! :)
