Banana Oatmeal Muffins

Banana Oatmeal Muffins!!
Hello hello!! I'm Buttercup is BACK!!! So sorry for the delay, but I haven't been baking much these past few months. Back in July, I joined Weight Watchers. To make a long story short, I was miserable at my job and needed to do something good for myself OTHER than work 40 hours a week. Since then, I have done exceptionally well on the program. The only problem?? I don't bake as much as I used to which is why I have been very quiet in cyberspace these days.

Back to the baked goods at hand. :) I found these Banana Oatmeal Muffins from a web search which led me to a blog called Keeping Up with the Joneses. Super cute couple and great recipes on the blog. I was really intrigued because she used her blender to whip everything together! Awesome. :) They are a little spongy  but I think that is because there is no fat in the them. Next time, I might use low-fat Greek yogurt instead of non-fat. Either way, they are delicious and freeze well! I froze half of them and then could take one out of the freezer in the morning before work. By the time I needed something to eat at work, it would be defrosted! Awesome!

Banana Oatmeal Muffins (Points+: 4 points)
2 bananas
6 ounces non-fat, plain Greek yogurt
2 eggs
½ cup sugar
¼ cup brown sugar
1½ teaspoon baking powder
½ teaspoon baking soda
2½ cups old-fashioned oats

Preheat the oven to 400°F. Spray muffin tin with non-stick cooking spray or line with silicone or foil liner (paper liners stick too much in a base without flour). Place all of the wet ingredients in a blender or food processor and then add the dry ingredients. 
First you add the wet ingredients.
And then you add the dry!
This is oddly beautiful to me, so I felt compelled to share. :)
Blend until the oats are smooth.  
Shout to my sister Erin for my awesome blender! :) It was a 21st birthday present!
Divide batter evenly among muffin tin. 
I opted to use cooking spray instead of foil liners. 
Bake for 12-15 minutes or until toothpick comes out clean.
Golden brown and puffy! So cute!!
Ready for breakfast! Or a snack... :)
